The idea for these cupcakes came out of the great Food Network magazine. In my previous post I went through some of the issues I had with the recipe for the “Snickers” replica one. I ended up tweaking the recipe a bit and I’m happy with how they turned out. Its not as much nougat as it should be but in the end they tasted good and that’s what counts
The “Snickers” cupcakes are made up of a cupcake with chopped peanuts inside. Then I made up a peanut butter ganache to spread on top, followed by a decadent chocolate icing on top of that with more chopped peanuts sprinkled on top.
The “Almond Joy” cupcakes are a coconut flavored cake with a coconut mixture on top. That is then topped with a chocolate glaze and 2 whole almonds.
I have to admit – I don’t eat much cake. Over the years I’ve got burnt out on eating plain old cake. But yesterday it took everything in me not to tie into these almond joy ones. Wow did they look good! I hope my husband’s coworkers enjoyed them today!
