They Love Cupcakes

I’ve made lots of cakes for my husband’s work over the past few years, but cupcakes always seem to go over well.  I think it is in part because of the variety of flavors I can do.  I must say, it is fun to create these delicious cupcakes ~ almost even more than a decorated one.  I’m guessing that is because I’m a sucker for a delicious dessert!  So for September I did cupcakes again.  I brought back an old favorite (Peanut Butter/Chocolate ~ which always goes over well) and brought in 2 new ones!

A candy kind of cupcake

The idea for these cupcakes came out of the great Food Network magazine.  In my previous post I went through some of the issues I had with the recipe for the “Snickers” replica one.  I ended up tweaking the recipe a bit and I’m happy with how they turned out.  Its not as much nougat as it should be but in the end they tasted good and that’s what counts 🙂

The “Snickers” cupcakes are made up of a cupcake with chopped peanuts inside.  Then I made up a peanut butter ganache to spread on top, followed by a decadent chocolate icing on top of that with more chopped peanuts sprinkled on top.

The “Almond Joy” cupcakes are a coconut flavored cake with a coconut mixture on top.  That is then topped with a chocolate glaze and 2 whole almonds.

I have to admit – I don’t eat much cake.  Over the years I’ve got burnt out on eating plain old cake.  But yesterday it took everything in me not to tie into these almond joy ones.  Wow did they look good!  I hope my husband’s coworkers enjoyed them today!
